Carolyn's rhubarb & orange tart/chocolate brownies

Rhubarb and Orange Tart

Ingredients
Rhubarb

For the pastry:
6 ozs plain flour (any flour will do not necessarily wheat flour)
3 ozs butter
1 oz icing sugar

Sauce:
6 ozs caster sugar
rind and juice of one orange
1 oz plain flour
1 egg, beaten (added later)

Method: Make the pasty case and line a flan ring 8 ins in diameter and leave to rest in a cool place.

Make up the orange juice to ¼ pint with water and make sauce with caster sugar, flour, orange rind and liquid. Cool – then add beaten egg.

Fill flan case with rhubarb. Pour sauce over. Bake for about 40 mins at Gas 6 or 200° C. Eat hot or cold.

Chocolate Brownies
125g butter
200g soft brown sugar
125g plain chocolate chopped
50g spelt flour (or plain flour)
20g cocoa powder
3 eggs
150g nuts (e.g. almonds, walnuts or hazelnuts or mixture)

Preheat oven to 180degrees c or 350 degrees fahrenheit. Grease and line a 20x20 cm tin.

Place butter, sugar, and choc in a bowl over a pan of simmering water and stir until melted.

Sift flour, cocoa powder adn baking powder into mix and stir well. Add eggs and nuts.

Pour into baking tin and bake for 35 mins until booked through but still soft in the center.
Cut into clices and cool on a wire rack.

14g fat per serving
Makes 16-20

50 min prep and cook time.
